I know we are a card company, not a cake or baking company, but who doesn't love a good pancake, especially today!
Ingredients
100g Plain Flour
2 Large Eggs
300ml Milk
1 Tbsp of sunflower or vegetable oil and a little bit extra for frying them!
Lemon juice to serve (optional)
Caster Sugar to serve (optional)
Method
Put the flour, eggs, milk, tbsp of oil and a pinch of salt in a bowl or a large jug (a jug is easier for pouring later!), then whisk to make a smooth batter.
If you can, set it aside for about 30mins, but you can get cooking straight away if you're pressed for time.
Put a medium sized frying pan on a medium heat and wipe it carefully with some oiled kitchen paper.
When the pan is hot, cook your pancakes for 1 min on each side until golden, keep them warm in the oven as you're going.
Serve them with lemon juice and caster sugar or whatever your favourite topping is and enjoy!

1 Medium Banana
2 Medium Eggs
100g of oats
Sunflower, vegetable or coconut oil for frying
Method
Combine all the ingredients in a blender until smooth and leave it stand for a few minutes to thicken.
Pour a ladle of your mixture onto a medium heated pan.
Cook until golden, turning them when the edges of the pancake look set.
Serve with honey, natural yoghurt, berries, all of the above or whatever your favourite topping is and enjoy!
